2 tbls olive oil
1 can peas, corn, kidney beans(rinsed), navy beans (rinsed), green beans (all drained)
1 small onion
1 small zucchini
3 cloves garlic
4 sliced carrots
6 cups water
½ cup sliced celery
1 28oz. can tomato sauce
1 cup chopped broccoli
1 cup chopped cabbage
1 pound small pasta
Saute’ onions in oil in bottom of 8 qrt stock pot. Add crushed garlic & stir for 1 minute. Add water and tomato sauce. Stir. Add all other ingredients and season to taste. Bring to boil. Simmer on low for 1 hour covered.
